Banana flambe french toast

Ingredients
- 2 eggs
- 2 thick slices of bread
- 25g butter
- 1 firm banana
- 50g dark brown sugar
- 1tsp cinnamon
- 50 ml spiced rum
Method
- First prepare the french toast, beat the eggs in a shallow bowl big enough to fit the bread in.
- Dip the bread in the beaten egg and allow it to absorb the mixture.
- Heat the butter in a frying pan and add the sliced banana.
- Add the sugar and cinnamon and cook until the sugar has dissolved.
- Now turn up the heat and add the rum, tilt the pan to the flame to ignite for the flambe effect.
- In another pan fry the french toast until golden brown on both sides.
- Finally pour the banana mixture on top of the french toast and dust with some icing sugar.
