Ingredients
- 4 Eggs
- 1 tbsp Vanilla Essence
- 300g Caster Sugar
- 125g Butter
- Zest and Juice of 1 Orange
- 300g Plain Flour
- 1 tsp Mixed Spice
- 3 tbsp Baking Powder
- 150g Chopped Pecans
- 450g Carrots Grated
Method
- Cream Butter, Orange Zest and Sugar.
- Add Eggs slowly, folding in Carrots and Nuts.
- Add Vanilla Essence and Orange Juice.
- Sift Flour, Baking Powder, Salt and Spice into mixture
- Bake for 45-60 minutes at 180C.
