Carrot Cake

Ingredients

  • 4 Eggs
  • 1 tbsp Vanilla Essence
  • 300g Caster Sugar
  • 125g Butter
  • Zest and Juice of 1 Orange
  • 300g Plain Flour
  • 1 tsp Mixed Spice
  • 3 tbsp Baking Powder
  • 150g Chopped Pecans
  • 450g Carrots Grated

Method

  1. Cream Butter, Orange Zest and Sugar.
  2. Add Eggs slowly, folding in Carrots and Nuts.
  3. Add Vanilla Essence and Orange Juice.
  4. Sift Flour, Baking Powder, Salt and Spice into mixture
  5. Bake for 45-60 minutes at 180C.
