Cinnamon and apple French toast

Ingredients
- 2 tsp ground cinnamon
- 60g caster sugar
- 20g butter
- 20ml calvados
- 2 eggs
- 100ml milk
- 2 slices brioche
- 1 apple
Method
- Whisk the eggs, milk, half the sugar and a pinch of the cinnamon.
- Soak the bread in the egg mixture
- Peel and slice the apple.
- Mix the cinnamon with the remaing sugar and coat the sliced apple.
- Melt the butter in a frying pan and cook the apples until brown.
- Fry the bread on each side until brown.
- Pour the calvados over the apples and flambe then add to the bread and serve.
