Greek Style Beans

Ingredients

  • 2 tbsp olive oil
  • ½ red onion, thinly sliced
  • 400g tin chopped tomatoes
  • 1 tbsp honey
  • ½ tsp chilli flakes
  • 1 tsp ground cinnamon
  • ½ tsp paprika
  • 1 tsp dried oregano
  • 400g tin butter beans
  • 150g spinach
  • 1 Aubergine, roughly chopped
  • 1 ball mozzarella, sliced
  • 1 clove of garlic, finely chopped

Method

  1. Heat the oil in a large oven-proof frying pan over a medium heat. Add the onion, garlic and season with salt and pepper. Cook for 2-3 minutes until softened.
  2. Add the aubergine and fry until soft.
  3. Add the tomatoes, honey, chilli, cinnamon, paprika and oregano. Simmer for a few minutes. Stir in the beans and the spinach.
  4. Transfer to a casserole dish, add the mozzarella and bake for 20 minutes until the edges brown
  5. Scatter over the parsley and serve.
