Mexican Pork Stew

Ingredients

  • 3 cloves garlic, chopped
  • 1/2 litre water or light chicken stock
  • 1 tbsp Cumin
  • 1 tbsp Oregano
  • salt and freshly ground black pepper
  • 700g pork shoulder
  • 2 bay leaves
  • 400g chopped tomatoes
  • 1 tbsp Paprika
  • 1/2 tsp Cinnamon
  • 1 medium onion, sliced
  • 4 black peppercorns
  • 1/2 tsp Chilli flakes
  • 1 tbsp Coriander
  • 1/2 tsp Cayenne Pepper

Method

  1. Fry the pork, onion and garlic until brown and sealed.
  2. Add the spices and fry for 1 minute.
  3. Add the stock and chopped tomatoes. Cook on a high heat until reduced.
  4. Transfer to a slow cooker and cook for at least 6 hours.
