Mexican Pork Stew

Ingredients
- 3 cloves garlic, chopped
- 1/2 litre water or light chicken stock
- 1 tbsp Cumin
- 1 tbsp Oregano
- salt and freshly ground black pepper
- 700g pork shoulder
- 2 bay leaves
- 400g chopped tomatoes
- 1 tbsp Paprika
- 1/2 tsp Cinnamon
- 1 medium onion, sliced
- 4 black peppercorns
- 1/2 tsp Chilli flakes
- 1 tbsp Coriander
- 1/2 tsp Cayenne Pepper
Method
- Fry the pork, onion and garlic until brown and sealed.
- Add the spices and fry for 1 minute.
- Add the stock and chopped tomatoes. Cook on a high heat until reduced.
- Transfer to a slow cooker and cook for at least 6 hours.
