Vegetarian Chilli Tacos

Ingredients

  • 100ml Red Wine
  • Soured Cream
  • Taco Shells
  • 3 sticks celery
  • Cheddar Cheese
  • 1 clove garlic
  • 400g Red Kidney Beans
  • 1 Onion
  • 2 tbsp Tomato purée
  • 200g Mushrooms
  • 2 Red Chilli
  • 150ml vegetable stock
  • 400g Butter Beans

Method

  1. Fry the Onion garlic and Celery until soft
  2. Add the Mushrooms and Chilli and cook
  3. Add the Tomato Puree, Wine and Stock
  4. Simmer for 15 minutes, add the beans
  5. Cook until the sauce has reduced.
  6. Serve with Cheese Tacos and Jalapinos.
