Tomato Olive and Herb Crusted Trout

Ingredients
- Olive oil
- 50g Olives chopped
- 1 tbsp chopped Parsley
- 450g new Potatoes
- 1 tbsp chopped Thyme
- handful Cherry Tomatoes chopped
- 4 Trout fillets
- 115g Breadcrumbs
- Sugar snap peas
Method
- Mix the breadcrumbs, herbs, Tomatoes, Olives and Olive oil together, season well
- Cover the fillets with the mixture.
- Bake for 15 minutes until the breadcrumbs turn golden brown.
- Serve with Steamed Potatoes and Peas.
