Tomato Olive and Herb Crusted Trout

Ingredients

  • Olive oil
  • 50g Olives chopped
  • 1 tbsp chopped Parsley
  • 450g new Potatoes
  • 1 tbsp chopped Thyme
  • handful Cherry Tomatoes chopped
  • 4 Trout fillets
  • 115g Breadcrumbs
  • Sugar snap peas

Method

  1. Mix the breadcrumbs, herbs, Tomatoes, Olives and Olive oil together, season well
  2. Cover the fillets with the mixture.
  3. Bake for 15 minutes until the breadcrumbs turn golden brown.
  4. Serve with Steamed Potatoes and Peas.
